rhubarb

It's amazing to see the earth snap suddenly into action recognizing that Spring is here.

We had a slew of rhubarb plants that were accidentally cut down last year and it is actually exactly what they needed. They are at least 5 years old and were getting stringy and staying green all year (though they are a red variety of rhubarb). Everyday a new bright green rhubarb leaf pops out of it's shiny red bulb. Some stalks are already well on their way.
